Banana Chocolate Chip Bread

We have these friends, Brandon and Christy, who are extraordinary question-askers. They are the kind of people who ask questions that make those around them feel known. It’s such a gift. I’m not even sure they’re aware that they’re doing anything different – they’re genuinely curious and they truly care about their friends and family – but it really shows through the questions they choose to ask. Again and again we have felt so cared for by them because they ask good questions and they listen well.

I aspire to ask questions like these friends of ours. I want to learn how to ask the questions that dig a little deeper, rather than taking the easy way out and simply asking “how’s it going?” I always hesitate when asked that question – how much do you really want to know? What sort of answer are you looking for? Do I spill my guts and tell you how utterly overwhelmed I am? You probably weren’t looking for that, so do I just say that I’m fine? Is there some better way to answer that question?

I’ve been having all these thoughts rolling around my head lately and I happened upon this article over on Donald Miller’s Storyline blog. I love this quote from Melton’s article:

We learned that if we really want to know our people, if we really care to know them – we need to ask them better questions and then really listen to their answers.

We need to ask questions that carry along with them this message: “I’m not just checking the box here. I really care what you have to say and how you feel. I really want to know you.”

Isn’t that what we all crave? To be known? Not just to have people that know our favorite foods and our birthday, but to have people that know our dreams and our fears. It’s such a treasure if you have people that ask you those questions. But why not also be the person that asks those questions?

Instead of simply waiting for someone to enter into our world and ask us those questions – why don’t we put ourselves out there and ask someone else the difficult, potentially awkward questions. It’s in that space that growth happens. The process of knowing one another and truly being known can feel so extraordinarily uncomfortable. But the reward of deeper relationships far outweighs any potential awkwardness along the way.

Confession time – I’ve been holding out on you guys. This is one of my absolute favorite recipes. One fateful day in college my roommate Anna returned from a quick trip home and brought with her the most incredible loaf of chocolate chip banana bread. We sat on our little futon in our room, hunched over the foil wrapper of heavenly crumbs. I’d never had banana bread with chocolate chips in it before and I’m pretty sure I ate half the loaf with no shame at all. I vowed then to learn how to make banana bread that was at least half as delicious – I like to think this one has turned out pretty great.

This banana bread doesn’t look like much, but don’t let that fool you. It’s so so good. I’ve been making it since college and it always gets good reviews. You can always add walnuts or pecans as well – I recommend 1/2 c nuts and reducing your chocolate chips to 1/2 c as well if you go that route! And if you find you’ve always got bananas on-hand, you can put the extra brown ones in the freezer to use in this recipe later. Peel the bananas and place them in a freezer-safe bag before putting them in the freezer. Thaw them before using and then use the same way you would use fresh bananas. Fair warning – they’ll look totally gross once thawed, but they’ll taste just as good once you bake them into the bread!

This bread is best eaten while it’s still warm from the oven or the next day. Be sure to wrap the loaf of banana bread tightly with plastic wrap – this keeps the bread moist and delicious. I like to think it also locks the flavor in as it gets better a day or two after you bake it. This is a great breakfast treat, dessert, or any-time kind of snack. It’s especially good for those late-night-I’m-avoiding-studying-baking-sessions in college. I speak from experience. Enjoy.

Banana Chocolate Chip Bread

Ingredients
  

  • 1 1/4 c all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/2 c unsalted butter at room temperature
  • 1 c sugar
  • 2 very ripe bananas peeled and mashed
  • 1 c chocolate chips

Instructions
 

  • Mix flour, baking soda, and salt in a medium bowl and set aside.
  • In a small measuring cup with a spout, whisk eggs and vanilla together.
  • Grease and flour a 9x5x3 inch bread loaf pan and preheat the oven to 350 degrees F.
  • Using an electric hand mixer (or a stand mixer with a paddle attachment) cream butter and sugar together till light and fluffy. Slowly add the egg and vanilla mixture, mixing till combined. To save on dishes, use the same measuring cup to mash the two bananas with a fork. Add the bananas to your mixture, combine well. At this point the mixture will look a bit lumpy and curdled - that's okay!
  • Remove the bowl from the mixer and use a rubber spatula to add the flour mixture and stir until just combined. Fold in the chocolate chips and pour batter into floured pan.
  • Bake for 50-55 minutes, or until a toothpick comes out clean. Cool the bread for 5-10 minutes before removing it from the pan. Let cool completely (if you can resist) and then wrap bread tightly in plastic wrap to store (this is VERY important to keep the banana bread moist and delicious.)

Strawberry Lemonade and Mid-Week Inspiration

Every once in a while I love to share a few of the things that have been inspiring me lately – I call them my “mid-week inspiration” posts. I know that come the middle of the week I can use a little something to inspire me to make it through to the weekend, so I like to share some of that with you! This week I’m focusing on one in particular – it’s a podcast called The Boredom Experiment.

This podcast is created by two of our very favorite wedding photographers, known as We Are The Parsons. Jeremy and Ashley Parsons are the kind of people who soak up life to its fullest extent – and when they feel they aren’t doing that well enough, they take a step back, reevaluate, and try something new. It’s been a beautiful thing to watch their business grow and flourish, to read their captivating way of telling stories, and admire all they’re doing from afar.

The Boredom Experiment is the chronicle of their year as they take a break from social media. It’s thoughtful storytelling woven together with music, with the words of Jeremy and Ashley’s kids, and with such real emotion that it’s easy to imagine you’re cozied up with them in their revamped Shasta trailer, sharing stories and laughing over a glass of wine. We haven’t yet met Ashley and Jeremy in person, but I imagine we’d be kindred souls.

A few weeks ago I shared about a thought-provoking Ted Talk I enjoyed. The Parsons’ podcast is in the same vein. As we become more and more desensitized to the lure and the influence of social media, our phones, and other things that suck our time away without us realizing it, these voices of reason become ever more important for us to hear. All this thinking is making me thirsty – how about some strawberry lemonade to quench our thirst? Last week we went strawberry picking with our small group and returned home with a gallon bucket, overflowing with fresh strawberries. We’re reaching the end of strawberry season here in NC, so now’s the time to take your family strawberry picking or snag some at your local farmer’s market before they’re all gone! Further north you’ve probably got a few more weeks left of your growing season, so enjoy it!

I adapted this recipe from one I made last summer for blueberry mint lemonade. This method of lemonade-making has endless possibilities, so don’t be afraid to experiment and have fun with it!

Strawberry Lemonade

Ingredients
  

  • 3/4 c fresh squeezed lemon juice 5-6 medium lemons
  • 3/4 c sugar
  • 1 c fresh or frozen and thawed strawberries
  • 1 c hot water
  • 3 c cold water

Instructions
 

  • Using a blender (or a large pitcher and an immersion blender - my preferred method) combine fresh squeezed lemon juice, sugar, and hot water. Blend until sugar has dissolved. Add fresh or frozen (thawed) strawberries and blend again till berries are well blended.
  • Add 3 c cold water, blend till combined. Pour through a fine mesh sieve if you wish to remove some of the strawberry seeds.
  • Refrigerate for at least an hour before serving.

Recipe Roundup for a Springtime Brunch

You guys! Spring is here! Around our house that means planting the garden, drinking our coffee on the porch in the morning, going strawberry picking just down the road, looking forward to fresh produce and summertime meals, and preparing for a hefty wedding season this year. We’ve already got four under our belts and can hardly believe how fortunate we are that we get to celebrate with so many extraordinary couples this year.

While we’re preparing for a full season of celebrating some of the best around, we’re also trying to make time to slow down and savor each day. Over the weekend we found a fantastic collection of big band music on old records. We got 10 records for $2. Seriously. I was cracking up at ourselves yesterday morning as we got up and opened the windows, made coffee, put on a record, and played big band music out onto our front yard as we weeded and watered our little garden. It sounds so ridiculous and idyllic, but starting the day in this way forced us to slow down rather than rushing straight into emails and editing.

On the increasingly rare occasion that we’re home with no plans on a weekend, we love to savor our time by waking up slowly and making a delicious breakfast or brunch together. Since Mother’s Day is this weekend and all manner of bridal showers and baby showers are just around the corner, I figured it was the perfect time to round up a few of my favorite brunch recipes and ideas! Perhaps this weekend you could treat someone (or a whole lot of someones) to a delicious brunch! Whatever you do, I encourage you to slow down and savor it all.

Strawberry Banana Peach Smoothie – Who doesn’t love having a smoothie with breakfast? Make a big batch of these for your guests, and serve them in pretty glasses with fun striped straws if you want to fancy-up your meal.

Simple Granola – This granola would be a perfect addition to a make-your-own breakfast parfait station! It’s perfect served alongside Greek yogurt, fresh or dried fruit, and local honey. I can already picture this parfait station – it’s a pretty little table all dressed up for a bridal shower, baby shower, or Mother’s day, of course! Use cute little parfait glasses and serve all the fruit, granola, and extra add-ins in pretty bowls on the side!

Overnight Cinnamon Rolls with Maple Cream Cheese Icing – These overnight cinnamon rolls are perfect if you want your guests to think you got up in the wee hours of the morning to make cinnamon rolls for them! You and I will know that you actually got to sleep in! Make these the night before, place them in the fridge, let them warm up and rise a bit in the morning, pop them in the oven and you’re good to go!

Simple Breakfast Tacos – Instead of a sweet brunch, take a savory route! Create a breakfast taco bar – whip up some scrambled eggs, bacon, and sausage, and serve with tortillas and your favorite taco fixings. Let your guests assemble their own breakfast tacos and everyone will be happy!

Recipe Roundup for Cinco de Mayo

You guys. What happened to April? Somehow it’s the first of May and Cinco de Mayo is right around the corner! I love any excuse to eat delicious food, and I figured what better time than now to round up some of my favorite Mexican-inspired dishes to celebrate!

Slow Cooker Barbacoa Pork Tacos – These tacos can easily take center stage at your Cinco de Mayo fiesta. They require little prep time, make your entire house smell heavenly, and your friends will be asking you for the recipe before they leave.

Pico de Gallo – This classic pico recipe is a favorite in our kitchen. I’m counting the days till we have fresh tomatoes from our garden so I can mix up a batch of this flavorful salsa!
