Strawberry Lemonade and Mid-Week Inspiration

Every once in a while I love to share a few of the things that have been inspiring me lately – I call them my “mid-week inspiration” posts. I know that come the middle of the week I can use a little something to inspire me to make it through to the weekend, so I like to share some of that with you! This week I’m focusing on one in particular – it’s a podcast called The Boredom Experiment.

This podcast is created by two of our very favorite wedding photographers, known as We Are The Parsons. Jeremy and Ashley Parsons are the kind of people who soak up life to its fullest extent – and when they feel they aren’t doing that well enough, they take a step back, reevaluate, and try something new. It’s been a beautiful thing to watch their business grow and flourish, to read their captivating way of telling stories, and admire all they’re doing from afar.

The Boredom Experiment is the chronicle of their year as they take a break from social media. It’s thoughtful storytelling woven together with music, with the words of Jeremy and Ashley’s kids, and with such real emotion that it’s easy to imagine you’re cozied up with them in their revamped Shasta trailer, sharing stories and laughing over a glass of wine. We haven’t yet met Ashley and Jeremy in person, but I imagine we’d be kindred souls.

A few weeks ago I shared about a thought-provoking Ted Talk I enjoyed. The Parsons’ podcast is in the same vein. As we become more and more desensitized to the lure and the influence of social media, our phones, and other things that suck our time away without us realizing it, these voices of reason become ever more important for us to hear. I urge you to follow along with Tim and I as we look forward to another Boredom Experiment podcast each month.

All this thinking is making me thirsty – how about some strawberry lemonade to quench our thirst? Last week we went strawberry picking with our small group and returned home with a gallon bucket, overflowing with fresh strawberries. We’re reaching the end of strawberry season here in NC, so now’s the time to take your family strawberry picking or snag some at your local farmer’s market before they’re all gone! Further north you’ve probably got a few more weeks left of your growing season, so enjoy it!

I adapted this recipe from one I made last summer for blueberry mint lemonade. This method of lemonade-making has endless possibilities, so don’t be afraid to experiment and have fun with it!

Strawberry Lemonade

Ingredients
  

  • 3/4 c fresh squeezed lemon juice 5-6 medium lemons
  • 3/4 c sugar
  • 1 c fresh or frozen and thawed strawberries
  • 1 c hot water
  • 3 c cold water

Instructions
 

  • Using a blender (or a large pitcher and an immersion blender - my preferred method) combine fresh squeezed lemon juice, sugar, and hot water. Blend until sugar has dissolved. Add fresh or frozen (thawed) strawberries and blend again till berries are well blended.
  • Add 3 c cold water, blend till combined. Pour through a fine mesh sieve if you wish to remove some of the strawberry seeds.
  • Refrigerate for at least an hour before serving.

Recipe Roundup for a Springtime Brunch

You guys! Spring is here! Around our house that means planting the garden, drinking our coffee on the porch in the morning, going strawberry picking just down the road, looking forward to fresh produce and summertime meals, and preparing for a hefty wedding season this year. We’ve already got four under our belts and can hardly believe how fortunate we are that we get to celebrate with so many extraordinary couples this year.

While we’re preparing for a full season of celebrating some of the best around, we’re also trying to make time to slow down and savor each day. Over the weekend we found a fantastic collection of big band music on old records. We got 10 records for $2. Seriously. I was cracking up at ourselves yesterday morning as we got up and opened the windows, made coffee, put on a record, and played big band music out onto our front yard as we weeded and watered our little garden. It sounds so ridiculous and idyllic, but starting the day in this way forced us to slow down rather than rushing straight into emails and editing.

On the increasingly rare occasion that we’re home with no plans on a weekend, we love to savor our time by waking up slowly and making a delicious breakfast or brunch together. Since Mother’s Day is this weekend and all manner of bridal showers and baby showers are just around the corner, I figured it was the perfect time to round up a few of my favorite brunch recipes and ideas! Perhaps this weekend you could treat someone (or a whole lot of someones) to a delicious brunch! Whatever you do, I encourage you to slow down and savor it all.

Strawberry Banana Peach Smoothie – Who doesn’t love having a smoothie with breakfast? Make a big batch of these for your guests, and serve them in pretty glasses with fun striped straws if you want to fancy-up your meal.

Simple Granola – This granola would be a perfect addition to a make-your-own breakfast parfait station! It’s perfect served alongside Greek yogurt, fresh or dried fruit, and local honey. I can already picture this parfait station – it’s a pretty little table all dressed up for a bridal shower, baby shower, or Mother’s day, of course! Use cute little parfait glasses and serve all the fruit, granola, and extra add-ins in pretty bowls on the side!

Overnight Cinnamon Rolls with Maple Cream Cheese Icing – These overnight cinnamon rolls are perfect if you want your guests to think you got up in the wee hours of the morning to make cinnamon rolls for them! You and I will know that you actually got to sleep in! Make these the night before, place them in the fridge, let them warm up and rise a bit in the morning, pop them in the oven and you’re good to go!

Simple Breakfast Tacos – Instead of a sweet brunch, take a savory route! Create a breakfast taco bar – whip up some scrambled eggs, bacon, and sausage, and serve with tortillas and your favorite taco fixings. Let your guests assemble their own breakfast tacos and everyone will be happy!

Recipe Roundup for Cinco de Mayo

You guys. What happened to April? Somehow it’s the first of May and Cinco de Mayo is right around the corner! I love any excuse to eat delicious food, and I figured what better time than now to round up some of my favorite Mexican-inspired dishes to celebrate!

Slow Cooker Barbacoa Pork Tacos – These tacos can easily take center stage at your Cinco de Mayo fiesta. They require little prep time, make your entire house smell heavenly, and your friends will be asking you for the recipe before they leave.

Pico de Gallo – This classic pico recipe is a favorite in our kitchen. I’m counting the days till we have fresh tomatoes from our garden so I can mix up a batch of this flavorful salsa!

Roasted Corn Salsa – If you’re looking to step up your salsa game, check out these two recipes for roasted corn salsa. My favorite is the one with roasted red bell peppers. So good.

Guacamole – Who can say no to guacamole? This recipe is delicious and totally adaptable to suit your taste buds. Want to add more heat or more lime? Go right ahead!

Oven-Roasted Parmesan Garlic Broccoli

You guys. This recipe is a little treasure. Recently a friend of mine shared that she had tried roasting broccoli in the oven one day and never looked back. I took her advice and tried it myself and even though I loved broccoli before, this takes it to a whole other level.

The little broccoli stalks get nice and tender, and the “leaves” get crispy and delicious. With a little salt and pepper, a couple cloves of garlic, and some olive oil, this simple side dish couldn’t get much easier. Squeeze some lemon and grate a little fresh parmesan over the top and you’re ready to enjoy!

Oven-Roasted Parmesan Garlic Broccoli

Adapted from Recipe Tin Eats
Print Recipe Pin Recipe
Prep Time 10 mins
Cook Time 20 mins
Total Time 30 mins

Ingredients
  

  • 1 bunch broccoli washed and cut into florets
  • 2 cloves garlic sliced
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 Tbs olive oil
  • Fresh squeezed lemon juice
  • Freshly grated parmesan

Instructions
 

  • Preheat oven to 350.
  • Toss broccoli and garlic together on a rimmed baking sheet with 2 Tbs olive oil. Sprinkle with salt and pepper. Roast for about 10 minutes, remove from oven and flip broccoli. Roast for 10 more minutes, or until stalks are tender and tops start to get crispy.
  • Remove from oven, sprinkle with fresh lemon juice and parmesan. Serve immediately.

Favorite Apps for Finding New Recipes

If you’re anything like me, you may find it difficult to keep track of your favorite recipes, get overwhelmed when browsing new recipes, or maybe you’re not even sure where to begin when it comes to meal planning.

First of all, if you don’t plan your meals at all, now is a great time to start! Planning out your meals (or at the very least your dinners) will save you money as well as immense amounts of time and stress wondering what you should cook for your next meal.

I’m not a stickler about planning my weekly meals every Sunday or anything like that, but before we go to the grocery store I do choose 3 or 4 dinner meals to cook, and a few lunch and breakfast items to fill in the gaps. We shop about once a week, sometimes more if I forget an item. But we always stick to the list. That’s what works for us – you’ll have to find your own rhythm to figure out what works for you and your family!

I have a few favorite tools that I use when searching for new recipes and making my shopping list. I’m a very visual person, so I almost always want to see a photograph of the dish I’m going to make before I make it. If a certain recipe doesn’t look appetizing, I’m much less inclined to want to try making it. The tools below are very visual-oriented, and I hope you’ll find them as helpful as I do!

Pinterest – This is my catch-all for finding recipes. I have my This Wild Season account for general food and kitchen inspiration, as well as a few boards on my personal account dedicated to food, drinks, and inspiration for that coffeeshop/bakery I dream of owning one day.

The beauty of Pinterest is that you can create as many boards as you like for as many topics as you choose. Want to split your food board into sides, main dishes, and desserts? You can do that!

I’ve even created a secret board to keep track of the recipes I’ve tried and loved. I use my public boards to collect ideas, inspiration, and recipes I might one day try. And then I’ll repin the best recipes to my secret board – making notes on what I want to try or change the next time I make the recipe. This is super helpful when I’m working on perfecting a recipe to share here with all of you!

Yummly – This is another great tool for collecting recipes you want to try. It’s Pinterest-y in its layout and each photograph includes notes on cooking time, how many ingredients are involved, and it always links back to the original blog post.

I personally love that you can install what they call the “Yum” button. When you’re browsing through food blogs and come across a recipe you want to save, you simply hit the Yum button on your browser. It automatically saves that recipe to your Recipe Box on their site.

Once you’ve “yummed” a recipe, you can place it in a “collection” such as breakfasts, dinners, or desserts. I imagine this would be a great way to keep track of large amounts of recipes and not run the risk of overwhelming your followers over on Pinterest with 872 “super simple slow cooker recipes.”

FoodGawker – This is a great site for recipes with beautiful food photography. FoodGawker has a submission process and they only accept blog posts that have high quality photographs.

Since I’m a visual person, this site is awesome for searching out delicious looking recipes! I just trust that if someone took the time to make their recipe look beautiful, they also care enough to make it taste delicious. That’s probably flawed logic, but it hasn’t gotten me into too much trouble so far!

FoodGawker also has a great search feature that’s super helpful to find what you’re looking for! You search by category or keyword, save favorites, and even look at the current popular recipes to see what others are enjoying.

Sticky Notes – Nope. That’s not the name of some new app. I’m talking about old school sticky notes. The ones you used to collect in wild colors and stick all over your walls and school notebooks in an attempt to keep yourself organized. What? You still do that? Oh good, me too.

Lately I’ve gotten in a habit of reading cookbooks from start to finish. I’ve made it through The Smitten Kitchen Cookbook, The Yellow Table Cookbook, Fruitful, and I’m currently working my way through Off the Menu. Next on my list is The Chelsea Market Cookbook – Tim got it as a Christmas gift for me!

While I read, I try to keep a stack of sticky notes next to me, and I mark each recipe I want to make. My cookbooks all have little sticky-note-fringe poking out the top of their pages now. It’s perfect for meal planning because I can quickly flip back through a book to find a recipe I wanted to make.
