Recipe Roundup for Cinco de Mayo

You guys. What happened to April? Somehow it’s the first of May and Cinco de Mayo is right around the corner! I love any excuse to eat delicious food, and I figured what better time than now to round up some of my favorite Mexican-inspired dishes to celebrate!

Slow Cooker Barbacoa Pork Tacos – These tacos can easily take center stage at your Cinco de Mayo fiesta. They require little prep time, make your entire house smell heavenly, and your friends will be asking you for the recipe before they leave.

Pico de Gallo – This classic pico recipe is a favorite in our kitchen. I’m counting the days till we have fresh tomatoes from our garden so I can mix up a batch of this flavorful salsa!

Roasted Corn Salsa – If you’re looking to step up your salsa game, check out these two recipes for roasted corn salsa. My favorite is the one with roasted red bell peppers. So good.

Guacamole – Who can say no to guacamole? This recipe is delicious and totally adaptable to suit your taste buds. Want to add more heat or more lime? Go right ahead!
